Southwestern Chicken Salad

This Southwestern Chicken Salad includes lettuce, avocado, tomatoes, bell pepper, green onions, corn and black beans. Add the ranch taco Greek yogurt dressing for a delicious salad.

  • 2 cups shredded or cubed chicken cooked
  • 1 head lettuce chopped
  • 1 bell pepper diced
  • 1 large tomato diced
  • 4 green onions sliced
  • 2 avocados diced
  • 1/4 cup cilantro chopped
  • 1 can corn, 15 oz drained
  • 1 can black beans, 15 oz drained and rinsed
  • 1 bag tortilla chips
  • Ranch Taco Dressing:
  • 1/2 cup mayo
  • 2/3 cup plain Greek yogurt
  • 1 Tbsp ranch dressing dry mix seasoning
  • 1 Tbsp taco seasoning


  • In a large bowl, combine all salad ingredients together, except for the tortilla chips.
  • To make the dressing, in a small bowl stir together the Greek yogurt, mayo, taco seasoning and ranch dressing mix.
  • Pour about half of the dressing over salad. Toss to combine, then gradually add more dressing until it's mixed in.
  • Serve with tortilla chips.
