Chicken Broccoli Potato Casserole

This chicken broccoli potato casserole tastes delicious with a creamy cheese sauce and a crunchy topping. Prepare the chicken and potatoes ahead of time and use frozen broccoli to make this meal come together quickly.
  • 1 (16 oz) bag of frozen broccoli florets
  • 2 cups chicken, cooked and shredded or cubed
  • 3-4 potatoes, cooked, peeled and sliced
  • ½ cup mayonnaise
  • ½ cup milk
  • 1 can (10.5 oz.) cream of chicken soup
  • 2 cups shredded cheese, divided
  • 1 cup corn flakes, crushed (or ½ cup dry bread crumbs)
  • 1-2 Tablespoon butter, melted
  1. Arrange the broccoli florets in the bottom of a 9x13 baking dish.
  2. Add the cooked chicken on top of the broccoli.
  3. Layer the cooked and sliced potatoes on top of the chicken.
  4. In a mixing bowl, combine the mayonnaise, milk, cream of chicken soup and 1 cup of cheese. Mix until combined. Pour over the broccoli, chicken and potatoes.
  5. Sprinkle the remaining cheese on top.
  6. In a small bowl, melt the butter. Add the crushed cornflakes to the butter and mix until combined.
  7. Sprinkle the cornflakes on top of the chicken broccoli potato casserole.
  8. Cover with aluminum foil. Bake at 350 degrees for 30 minutes until cheese is melted on top.
