Parmesan Zucchini Chips

These Parmesan Zucchini Chips are easy to make and taste delicious. And they make a great side dish to a summer dinner.
  • 1 zucchini squash, sliced
  • ¼ cup dry Italian bread crumbs
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2-4 Tablespoons butter, melted
  • Shredded Parmesan cheese (optional)
  1. In a medium bowl, combine the bread crumbs, Parmesan, salt and pepper.
  2. Lightly brush the front and back of each slice of zucchini with melted butter. Place the zucchini in the bread crumb seasoning and coat both sides.
  3. Grease a baking pan with cooking spray, then put the zucchini chips onto the pan. Sprinkle with shredded Parmesan cheese if desired.
  4. Bake at 400 degrees for 20 minutes until it begins brown.
