Chocolate Chip Zucchini Muffins

  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2½ cups zucchini, shredded
  • 3 cups all-purpose flour*
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1½ teaspoon ground cinnamon
  • 1 cup chocolate chips
  1. Using an electric mixer, mix together the sugar, vegetable oil, eggs, vanilla and shredded zucchini.
  2. In a separate medium bowl combine the flour, baking powder, salt and cinnamon.
  3. Pour the dry ingredients into the zucchini mixture and mix well. Fold in the chocolate chips.
  4. Place liners in cupcake pans. Pour batter into each liner until it's about ⅔rds of the way full.
  5. Bake at 350 degrees for 20-25 minutes.
  6. *Note: I like to substitute 1 cup of all-purpose flour for 1 cup of wheat flour to make it more healthy.
