Waikiki Meatballs with Sweet & Sour Sauce
  • Meatballs:
  • 1 lb. ground turkey or ground beef
  • ⅔ cup cracker crumbs or bread crumbs
  • ⅔ cup onion, chopped
  • 1 egg
  • ¼ cup milk
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon ginger
  • Sauce:
  • 2 Tablespoons cornstarch
  • ½ cup brown sugar
  • ⅓ cup vinegar
  • 3 Tablespoons soy sauce
  • 1 can (20 oz.) pineapple tidbits
  • ⅔ cup green pepper, chopped
  1. To make the meatballs, mix together the ground turkey/beef, cracker crumbs, onion, egg, milk, salt, pepper, and ginger.
  2. Roll them into 1-inch diameter balls and place on a baking sheet with parchment paper. Bake at 375 degrees for 15-20 minutes.
  3. The meatballs can be prepared ahead of time and stored in the fridge or freezer.
  4. To prepare the sweet and sour sauce, in a pan combine the cornstarch and brown sugar. Mix in the vinegar, soy sauce, and pineapple juice and stir. Add in the cooked meatballs, green pepper, and pineapple and cook on the stove until the sauce thickens.
  5. Serve over rice.
  6. Directions for crockpot: Prepare and cook meatballs per the directions above. In a crockpot, mix together the cornstarch and brown sugar. Stir in the vinegar, soy sauce, and pineapple juice. Add the green peppers and pineapple. Stir. Then place cooked meatballs on top. Cover and cook on high for 3-4 hours. Serve over rice.
