Apple Cheesecake Bars
  • 2 cups all-purpose flour
  • ½ cup brown sugar
  • 1 cup butter, softened
  • 2 (8 oz) packages of cream cheese, softened
  • ½ cup sugar, plus 2 Tablespoons, divided
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 Granny Smith apples, peeled, cored and finely chopped
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Streusel Topping is as follows:
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • ½ cup quick cooking oats
  • ½ cup butter, softened
  • Caramel topping to drizzle on top
  1. Preheat oven to 350 degrees.
  2. Line 9x13 pan with aluminum foil.
  3. In a mixing bowl, mix the 2 cups flour and ½ cup brown sugar. Using a pastry cutter, cut in the 1 cup of butter until the mixture is crumbly. Press it into the pan evenly and bake for 15 minutes.
  4. Using an electric mixer or large mixing bowl, beat the cream cheese and ½ cup sugar until smooth. Add the eggs one at a time, then add the vanilla. Pour the mixture over the warm crust.
  5. In another bowl, combine the finely chopped apples, 2 Tablespoons sugar, cinnamon and nutmeg. Pour it over the cheesecake mixture.
  6. Using one last bowl, make the streusel topping by combining the 1 cup brown sugar, 1 cup flour, and ½ cup oats. Cut in the ½ cup butter with a pastry cutter or a fork until crumbly. Sprinkle it on top of the apple mixture.
  7. Bake at 350 degrees for 30 minutes.
  8. Allow to cool. Serve with caramel topping drizzled on top. It's easier to cut the bars after they've been refrigerated. You can even freeze some bars for a treat later.
