Best Lemon Bars
  • 1 cup butter, softened
  • 2 cups sugar, divided
  • 2¼ cups flour, divided
  • 4 eggs
  • 2 lemons, juiced
  1. In a bowl, mix together butter, ½ cup sugar, and 2 cups flour. Press onto the bottom of a greased 9x13 pan. Bake for 15 minutes at 350 degrees until golden.
  2. In another bowl, mix 1½ cups sugar and ¼ cup flour. And then whisk in the eggs and lemon juice. Pour over the baked crust. Bake for an additional 20 minutes at 350 degrees.
  3. Allow to cool. The bars will become firm as they cool. Sprinkle the top with a little powdered sugar.
