During the summer months, I make this Southwestern Chicken Salad for my family. It is a delicious meal! And I love that it’s an easy refrigerated recipe, and that I don’t have to turn on the oven, which heats up the house in the summer.

This Southwest chicken salad recipe is easy to throw together and doesn’t take too much time to make for dinner. What takes the most time is cutting up the vegetables that go in the salad.
On busy days, I’ll use canned chicken. If you use shredded or cubed cooked chicken, then that will take a little more time to prep this dinner. I suggest preparing the chicken in advance, and keeping it in the fridge or freezer until you are ready to use it.

Here is one way to make a Southwestern Chicken Salad recipe, and one that my family loves.
First, prepare the chicken in advance by cooking it, then shredding or cubing it. When cooking the chicken, sprinkle salt, pepper, garlic powder, and taco seasoning on top of chicken breasts, then cook until the chicken is tender and cooked through.
Cut up the the lettuce, bell pepper, tomato, green onions, avocado and cilantro. Drain and rinse the black beans and drain the canned corn.
In a large bowl, combine all salad ingredients together, except for the tortilla chips.
To make the dressing, in a small bowl stir together the Greek yogurt, mayo, taco seasoning and ranch dressing mix. Pour about half of the dressing over salad. Toss to combine, then gradually add more dressing until it’s all mixed in.
Serve with tortilla chips.

Southwestern Chicken Salad
Ingredients
- 2 cups shredded or cubed chicken cooked
- 1 head lettuce chopped
- 1 bell pepper diced
- 1 large tomato diced
- 4 green onions sliced
- 2 avocados diced
- 1/4 cup cilantro chopped
- 1 can corn, 15 oz drained
- 1 can black beans, 15 oz drained and rinsed
- 1 bag tortilla chips
- Ranch Taco Dressing:
- 1/2 cup mayo
- 2/3 cup plain Greek yogurt
- 1 Tbsp ranch dressing dry mix seasoning
- 1 Tbsp taco seasoning
Instructions
- In a large bowl, combine all salad ingredients together, except for the tortilla chips.
- To make the dressing, in a small bowl stir together the Greek yogurt, mayo, taco seasoning and ranch dressing mix.
- Pour about half of the dressing over salad. Toss to combine, then gradually add more dressing until it's mixed in.
