By not having the right amount of pumpkin puree, the flour will make the batter thicker which will lead to crumbly and dry bread. Also, overcooking bread or baking it at too high of a temperature will make it denser and dry.

How Do You Know When Pumpkin Bread Is Done?
To check if pumpkin bread is done, insert a toothpick in a couple of spots of the pumpkin bread. Usually where the bread cracks across the top of the pumpkin bread is a good area to check. When the toothpick comes out clean, the pumpkin bread is done. If not, bake 5-10 minutes more then recheck.

Preheat oven to 350 degrees. In a mixing bowl, combine the sugar and butter and mix well. Add in the eggs, canned pumpkin and vanilla extract. Mix until well combined.
In a different medium bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. Add flour mixture to the wet ingredients while alternating between adding in the milk. Fold in the chocolate chips.
Grease and flour two 9×5 baking loaf pans. Pour the batter into prepared pans.
Bake at 350 degrees for 45-55 minutes or until a toothpick inserted comes out clean. Allow the pumpkin bread to cool for a few minutes in the pans, then transfer them to a wire rack to cool.
