The Best Peanut Butter Bars

peanut butter barsEvery summer at our yearly neighborhood barbecue, it has become a tradition for me to make and bring peanut butter bars. One year when I didn’t bring peanut butter bars, I had a few people who were disappointed because they were looking forward to eating them. Since that time, I have brought peanut butter bars every year to the neighborhood barbecue. This past week, I made a new peanut butter bar recipe and I love them even more than my other recipe! This peanut butter bar recipe is definitely one that you’ll want to keep on hand.  Here is how to make the Best Peanut Butter Bars:

The Best Peanut Butter Bars
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup peanut butter
  • 2 cups flour
  • 2 cups oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup peanut butter
  • ½ cup butter, softened
  • ¼ cup milk
  • 2 teaspoons vanilla
  • 2 Tablespoons cocoa
  • 3 cups powdered sugar
  1. In a mixing bowl, mix the sugar and brown sugar. Add in the 1 cup of butter and cream together. Mix in the vanilla, eggs and 1 cup of peanut butter and mix well.
  2. In a medium bowl, mix together the flour, oats, baking soda and salt. Add the dry ingredients to the peanut butter mixture and stir until combined.
  3. Spread the dough onto an 18x13x1 cookie sheet pan and bake at 350 degrees for 15 minutes.
  4. Right after the peanut butter bars come out of the oven, take the 1 cup of peanut butter and drop small spoonfuls all over the top. Once it starts to melt, spread the peanut butter over the bars.
  5. Allow the peanut butter bars to cool.
  6. To make the frosting, in a mixing bowl mix together the butter, milk, vanilla, cocoa and powdered sugar. Spread on top of the bars.
