With Easter coming up soon, I wanted to make a treat for the family. Since I really like carrot cake, I decided to make these Carrot Cake Bars with Cream Cheese Frosting, and they turned out really good!
I especially love the cream cheese frosting, and so does my little boy who licked all of the frosting off the carrot cake. This would be a delicious spring and Easter dessert for the family or something you could take to a family gathering.
To make the Carrot Cake Bars, use a mixer to mix the sugar, Greek yogurt and oil until combined. Then add in the eggs one at a time.
In a separate bowl, combine the flour, baking powder, baking soda, cinnamon and salt. Add the dry ingredients to the wet ingredients and mix well.
Fold in the carrots and pour the batter into a 9×13 greased pan.
Bake at 350 degrees for 30 minutes. Test the center with a toothpick or knife. If it comes out clean, it’s done.
Cool completely, then frost with the cream cheese frosting.
To make the cream cheese frosting, use a mixer to cream the butter and cream cheese. Mix in the vanilla, then add the powdered sugar and mix until smooth.
