Pumpkin Streusel Cake

This Pumpkin Streusel Cake is moist and tastes so yummy! I love baking in the fall because it makes our house smell so good. And this is a perfect dessert to make during the fall season!

Pumpkin Streusel Cake
  • 4 eggs
  • 1⅔ cup sugar
  • 1 cup vegetable oil
  • 1 (15 oz.) can pureed pumpkin
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ½ cup flour
  • ¼ cup butter, softened
  • ¼ teaspoon cinnamon
  • GLAZE:
  • 1 Tablespoon butter, softened
  • ½ teaspoon vanilla
  • 1 cup powdered sugar
  • 1 Tablespoon milk
  • ¼ teaspoon salt
  1. To make the pumpkin bars, beat together the eggs, sugar, oil and pureed pumpkin in a large bowl.
  2. In a small bowl, mix the flour, baking powder, baking soda, salt and cinnamon. Add the dry ingredients to the pumpkin mixture and mix until well combined.
  3. Pour the batter into a greased 9x13 pan.
  4. To make streusel, mix the sugars, flour and cinnamon in a small bowl. Cut in butter until crumbs form.
  5. Sprinkle the streusel topping over the pumpkin batter.
  6. Bake at 350 degrees for 30-40 minutes. Insert a toothpick in center, and if it comes out clean it's done.
  7. To make glaze, combine powdered sugar, salt, vanilla, butter, and milk in a small bowl. Beat until smooth. Add more milk or powdered sugar as needed to reach desired consistency. Pour glaze over the warm cake.
