This Pumpkin Streusel Cake is moist and tastes so yummy! I love baking in the fall because it makes our house smell so good. And this is a perfect dessert to make during the fall season!

Ingredients
- PUMPKIN CAKE:
- 4 eggs
- 1⅔ cup sugar
- 1 cup vegetable oil
- 1 (15 oz.) can pureed pumpkin
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- STREUSEL TOPPING:
- ¼ cup sugar
- ¼ cup brown sugar
- ½ cup flour
- ¼ cup butter, softened
- ¼ teaspoon cinnamon
- GLAZE:
- 1 Tablespoon butter, softened
- ½ teaspoon vanilla
- 1 cup powdered sugar
- 1 Tablespoon milk
- ¼ teaspoon salt
Instructions
- To make the pumpkin bars, beat together the eggs, sugar, oil and pureed pumpkin in a large bowl.
- In a small bowl, mix the flour, baking powder, baking soda, salt and cinnamon. Add the dry ingredients to the pumpkin mixture and mix until well combined.
- Pour the batter into a greased 9x13 pan.
- To make streusel, mix the sugars, flour and cinnamon in a small bowl. Cut in butter until crumbs form.
- Sprinkle the streusel topping over the pumpkin batter.
- Bake at 350 degrees for 30-40 minutes. Insert a toothpick in center, and if it comes out clean it's done.
- To make glaze, combine powdered sugar, salt, vanilla, butter, and milk in a small bowl. Beat until smooth. Add more milk or powdered sugar as needed to reach desired consistency. Pour glaze over the warm cake.
