My friend made these Cherry Pie Bars the other day when we got together at her house. She was kind enough to send some home with my family. I ended up eating the whole plate and my husband didn’t get any. Oops! Because they were SO delicious, I had to make them again! Plus my husband got some too this time.

Ingredients
- CHERRY PIE BARS:
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- ½ teaspoon salt
- 3 cups all-purpose flour
- 1 can (20 oz) cherry pie filling (or a fruit pie filling of your choice)
- GLAZE:
- 1 cup powdered sugar
- 1 teaspoon almond extract
- 1-2 Tablespoons milk
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl, cream together butter and sugar. Add in the eggs, followed by the vanilla and almond extract. Add in the flour and salt. Mix well.
- Spread half of the batter in a greased 9x13 pan. Spoon the pie filling over the batter. Then drop tablespoons of the remaining batter over the pie filling.
- Bake for 35 minutes. Allow bars to cool.
- To make the glaze, mix powdered sugar, 1 teaspoon almond extract and milk. Drizzle glaze on the top of the bars.

That would send me into a diabetic coma. Usually, when I do make a dessert, like this one, for instance, I use baking Splenda or Truvia in place of sugar, which works great. For topping, crushed nuts and diced dried fruit works fine. The pie filling would have to be Sugar Free or I would cook up my own.
