I made this Lemon Angel Hair with Chicken this past week for dinner, and we really liked it, especially the lightly seasoned chicken on top.
Lemon Angel Hair with Chicken
1/2 lb. angel hair pasta
2 cloves garlic, minced
3 T. olive oil
2 lemons, juiced
3/4 cup half-and-half
3/4 cup pasta water
1/2 cup Parmesan, grated
1/2 tsp. lemon zest
Seasoned Chicken
2 boneless chicken breasts
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. paprika
2-3 Tbsp. olive oil
Directions:
1. To make the seasoned chicken, in a small bowl, mix the salt, pepper, garlic powder, onion powder, and paprika. Heat a skillet and pour in the 2-3 Tbsp. olive oil. Add the chicken, then sprinkle the seasonings over the chicken. Cook until the chicken is no longer pink in the middle. Take it off the stove, then let it sit a few minutes before cutting it into strips.
2. Cook angel hair pasta according to the directions on the box. Drain the pasta, but don’t rinse.
3. In a large skillet, cook the oil and garlic together for a few minutes. Add the lemon juice, half-and-half, and 3/4 cup pasta water to the garlic. Heat until the sauce begins to bubble. Add the pasta, lemon zest, Parmesan, and chicken to the sauce. Toss until the sauce is evenly distributed over all of it. Top with additional Parmesan cheese if desired.
