These Frosted Lemon Cookies are so soft and have just a hint of lemon in them. The first time I made these cookies, I gave some to my mother-in-law to try out. She loved them so much that she asked me for the recipe. Now when she makes them she gives us some of the cookies. I’m definitely okay receiving yummy cookies!
Frosted Lemon Cookies
- 1 cup sugar
- 3/4 cup butter, softened
- 3/4 cup vanilla yogurt
- 1 egg
- 1 tsp. grated lemon rind
- 2 Tbsp. juice of a lemon
- 2 tsp. Lemon Extract
- 2 1/2 cups flour
- 1 tsp. baking soda
Frosting
- 1/3 cup butter, softened
- 2 cups powdered sugar
- 2 Tbsp. juice of a Lemon
- 1 tsp. Lemon Extract
- 2-4 Tbsp. milk
Directions:
1. In a mixing bowl combine the sugar, 3/4 cup butter, yogurt, egg, lemon juice, lemon rind, and lemon extract. Beat together until well blended.
2. In another bowl, combine the flour and baking soda. Stir the dry ingredients in with the other ingredients in the mixing bowl.
3. Refrigerate for about 20 minutes.
4. Roll the dough into 1-inch balls and place on a cookie sheet. Bake at 375 degrees for 8-10 minutes, then place them on a rack to cool.
5. Combine the frosting ingredients together and mix well, then frost the cookies once they have cooled.
