A friend of mine made these Honey-Lime Chicken Fajitas for a get together, and they were so delicious that I had to make them again.
Honey-Lime Chicken Fajitas
3-4 large chicken breasts, cut up
3/4 cup vegetable oil
1/2 cup lime juice (approximately 5-6 limes juiced)
1 Tbs. onion
1/4 tsp. rosemary
1/4 tsp. thyme
1 Tbs. oregano
1 garlic clove, minced
1 Tbs. honey
1/2 green bell pepper, cut in slices
1/2 yellow bell pepper, cut in slices
tortillas
Directions:
Cut up the chicken and place it in a gallon size Ziploc bag with the vegetable oil, lime juice, onion, rosemary, thyme, oregano, garlic, and honey. Let it marinate for 2-4 hours in the fridge. After it’s marinated pour the entire contents of the bag in a skillet and cook on medium heat until chicken is cooked through. A few minutes before the chicken is done cooking, add the bell peppers. Place on a tortilla and garnish with cheese, sour cream, guacamole, and salsa.
