Homemade Potato Soup

Potato Soup Final

I mentioned a few weeks ago that I would give you this Homemade Potato Soup recipe. It’s really delicious, and it goes perfectly with these Homemade Bread Bowls, Perfect Corn Bread, or Biscuits Supreme. Since it’s going to be rainy and chilly here this weekend, I’ll probably make this for my family.

Potato Soup
6 large potatoes, diced
3-4 carrots, peeled and sliced
2-3 celery stalks, sliced
1/4 cup onion, chopped
1 can (14.5 oz.) chicken broth or dissolve 1 bouillon cube in 1 cup hot water
2 cans (12 oz.) evaporated milk
garlic salt
onion salt
salt and pepper
3 Tablespoons flour

Directions:
In a pot, boil the diced potatoes, carrots, celery, and onions for 15-20 minutes. Leave about 1 cup of the potato water in the pot and pour out the rest of the water. Add broth and evaporated milk and bring it to a boil, stirring occasionally. Season with the garlic salt, onion salt, salt and pepper until you like the taste.

In a small bowl, add the flour. Mix in cold water until it becomes a paste consistency. Add this to the soup to thicken it. Add more of a flour paste if you want the soup thicker. Let the soup simmer for 5 minutes, stirring occasionally until thickened.

    Since I just rolled into town yesterday and haven’t planned meals for this week I think I’ll make this tonight ~ I have everything needed and won’t need to make a trip to the grocery store. Thanks for sharing your recipe.

    Potato soup is one of my favoritest-ests. (= Sadly, one of my daughters hates potatoes in any soup at all…but I still sometimes sneak potato laced soup past her. She does notice, but she’s learned to be generous. Sigh. Your recipe looks delicious—you’re right; perfect for a cold rainy day.
