This Chicken Broccoli Casserole is a favorite at our house. My daughters love eating broccoli when I make this dish.
Chicken Broccoli Casserole
3-4 fresh bunches of broccoli, cut into flowerettes and steamed
2 cups chicken, cooked and shredded or cubed
3 potatoes, peeled, cooked and sliced
1/2 cup mayo
1/2 cup milk
1 can (10.5 oz.) cream of chicken soup
2 cups shredded cheese
1 cup corn flakes, crushed (or 1/2 cup dry bread crumbs)
1 Tablespoon butter, melted
Directions:
1) Prepare the broccoli by steaming, then draining out the water. Prepare the chicken by cutting it into cubes and cooking it, or boiling it then shredding it. Prepare the potatoes by peeling, cooking, then slicing them.
2) In the bottom of a 9×13 casserole dish, arrange the broccoli. Place the chicken on next followed by the potatoes on top. In a mixing bowl, combine the mayo, milk, cream of chicken soup and 1 cup of cheese. Pour the cream mixture on top of the broccoli, chicken and potatoes. Sprinkle the remainder of the cheese on top.
3) In a small bowl, combine the crushed corn flakes and melted butter together. Sprinkle over the top of the chicken broccoli casserole. Bake at 350 degrees for 30 minutes.
