This is one of my favorite Potato Casserole recipes. If you are planning on cooking a ham for the holidays, this is a perfect side dish to go with it.
Potato Casserole
6 medium potatoes, boiled, cooked, and chopped fine
1/4 cup butter, melted
1 can cream of chicken soup
1 1/2 cups grated cheddar cheese
1/4 cup green onion, finely chopped
1 pint sour cream
Topping:
2-3 Tablespoons butter, melted
3/4 corn flake crumbs
Directions:
Heat 1/4 cup butter with cream of chicken soup. Blend in cheese, onion, and sour cream. Mix in potatoes and place in 9×13 casserole dish. Combine the 2-3 Tablespoons butter and corn flake crumbs and sprinkle on top of potatoes. Bake at 350 degrees for 45 minutes to 1 hour.
