I really enjoy this Chicken Curry recipe. It’s not spicy, yet it has good flavor. Thanks to my best friend and her family for this recipe.
Chicken Curry
3 Tablespoons butter
1/4 cup minced onion
1 1/2 teaspoons curry powder
3 Tablespoons flour
3/4 teaspoon salt
3/4 teaspoon sugar
1/8 teaspoon ground ginger
1 cup chicken broth (or 1 chicken bouillon cube dissolved in 1 cup hot water)
1 cup milk
2 cups chicken, diced and cooked
1/2 teaspoon lemon juice
3-4 cups cooked rice
Directions:
Melt butter over low heat in heavy saucepan. Saute onion and curry powder in melted butter. Blend in flour, salt, sugar and ground ginger over low heat until mixture is smooth and bubbly. Stir in chicken broth and milk. Bring to a boil, stirring constantly. Boil 1 minute. Add cooked chicken and lemon juice. Heat through. Spoon Chicken Curry over cooked rice and add any of the following items to the top:
Pineapple chunks
Bacon Bits
Tomatoes, diced
Olives, diced
Flaked coconut
Sliced avocado
Slivered almonds or other nuts
Hard cooked eggs
Cheese
