Pumpkin Spice Bars

Since Thanksgiving is coming quickly, I want to share this Pumpkin Spice Bar recipe with you. It is oh so good! Start watching for the cans of pumpkin to go on sale and pick up extra so you can make this recipe a few times during the cold months.

Pumpkin Spice Bars
4 eggs
2 cups sugar
1 cup vegetable oil
1 can pure pumpkin (15 oz.)
2 cups flour (I use whole wheat)
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

1. Heat oven to 350 degrees. Lightly grease bottom and sides of a 15x10x1 pan with non-stick spray.
2. In a large bowl, beat eggs, sugar, oil and pumpkin until smooth. Stir in remaining ingredients. Spread in pan and lightly shake pan to even out the batter.
3. Bake 25-30 minutes until light brown and a toothpick inserted in the center comes out clean. Allow to cool fully before frosting.

Browned Butter Frosting (A favorite!)
2/3 cup real butter
4 cups powdered sugar
2 teaspoons vanilla
4 Tablespoons milk

In small saucepan, heat the butter over medium heat, stirring constantly. Cook 5-10 minutes until butter turns a nice golden brown. Remove from the heat. Add in remaining ingredients, stirring until frosting is smooth and spreadable. Spread on cake immediately.


Cream Cheese Frosting
1 package softened cream cheese
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 cups powdered sugar

Beat all ingredients with an electric hand or stand mixer until smooth. Spread on cake.
