The tomatoes in our garden are coming on in full force, so I’m looking for recipes in which I can use them. Since I was able to pick up avocados for only $0.20 each (price matched at Walmart from Rancho Markets), this was one of our meals this week.
Avocado-Tomato Sandwiches
2 medium ripe avocados, peeled and cubed
2 cups tomatoes, chopped
1/4 cup thinly sliced red onion
1/4 cup reduced-fat Italian salad dressing
1 Tbsp. lime juice
1 tsp. sugar
1/2 tsp. chili powder
1/4 tsp. salt
1/4 tsp. pepper
1 cup shredded mozzarella cheese
Italian bread
In a large bowl, combine the avocados, tomatoes, and onion. In a small bowl, whisk together the Italian dressing, lime juice, sugar, chili powder, salt and pepper. Pour it over avocado mixture and gently toss to coat. Slice the Italian bread. Place 1-2 large spoonfuls of avocado mixture on each slice of bread and sprinkle with cheese. Place on a baking sheet and broil for 1-2 minutes in the oven.
