I love muffins in the morning for breakfast. Here is a Brown Sugar Muffin recipe that you can whip together in the morning. Thanks to a friend for sharing this recipe.
Brown Sugar Muffins
1/2 cup shortening
1 cup brown sugar
1 Tablespoon vanilla
1 egg
1 teaspoon baking soda
pinch of salt
2 cups flour (I like to use half white wheat)
1 cup milk
Directions:
In mixing bowl, cream shortening and sugar together. Add the vanilla, egg, baking soda, and pinch of salt and mix well. Then alternate adding in the flour and milk. Place the mixture in muffin tins that have been greased, and sprinkle some brown sugar on before baking. Bake at 325 degrees for 20 minutes. Let them cool for a few minutes in the tin, then remove to a rack to cool.
