This is a delicious snack that my husband really loved, Homemade Chewy Granola Bars. He even shared one with his co-worker who enjoyed it too.
Homemade Chewy Granola Bars
1/2 cup peanut butter
1/3 cup honey
1/4 cup coconut oil (or another oil of your choice)
1 cup oats
1 cup TOTAL of any combination of sesame seeds, coconut flakes, sunflower seeds, dried fruit, or mini chocolate chips
Directions:
1) In medium-sized sauce pan, melt together peanut butter, honey and coconut oil.
2) Remove from heat and add the oats and 1 cup of any combination of sesame seeds, coconut flakes, sunflower seeds, dried fruit or mini chocolate chips. (I just poured in a variety of the ingredients until the cup was full.) Stir well.
3)Spread mixture into an 8×8 inch or 9×4 inch pan. Chill for 2 hours, then cut into bars. Wrap in plastic wrap to grab as a quick snack.
