Green Chili Pork
3-4 lb. pork roast or tenderloin
1/2 cup water
1 Tablespoon salt
pepper
2 (4 oz.) cans green chilies chopped
1 (28 oz.) can green chili enchilada sauce
1 onion, chopped
1 teaspooon cumin
handful of fresh cilantro chopped fine
1 cup dripping from roast
tortillas
Cook the pork roast in crock pot with 1/2 cup water, salt and pepper on low for 8-10 hours. Shred meat and place back in the liquid in the crock pot. Add the remaining ingredients (except tortillas) and let simmer on high, uncovered for 2-3 hours to reduce liquid and allow the mixture to thicken. Stir occasionally. Consistency should have the thickness of a stew. If needed add cornstarch to thicken. Serve with tortillas, cheese, lettuce, tomatoes, etc. Freeze any extra in a freezer ziploc bag.
