If you want a quick and easy breakfast idea, make a batch of these waffles, then freeze them. In the morning, take a few out of the freezer and pop them in the toaster to warm up.
Waffles
1 cup all-purpose flour
1 cup whole wheat flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 Tbs. sugar
3 eggs, beaten
4 Tbs. butter, melted
2 cups buttermilk*
*Since I don’t always have buttermilk in the house, I make my own by placing 2 Tbs. lemon juice in measuring cup, then add milk until it reaches 2 cups. Let it sit for 5 minutes.
1. Whisk together flours, soda, powder, salt and sugar. Mix in another bowl the eggs, and butter, then buttermilk. Add wet to dry and mix to combine. Sit for 5 minutes.
2. Pour waffle mixture into your waffle iron and follow its instructions. It should be golden brown. Serve promptly.
3. If you want to freeze them, let them cool, then place them in freezer bags and freeze.
