Last week, I picked up four pounds of strawberries for $0.99 lb! I froze some and ate some, and then made this simple and delicious shortcake to use up the rest of the strawberries.
Strawberry Shortcake
1/3 cup shortening
1 3/4 cup flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1 1/2 teaspoons vanilla
Soften shortening and put it in a mixing bowl. Add sugar and egg. Mix dry ingredients together, then add it and the milk to the creamed mixture, alternating until moistened. Add vanilla. Pur into 9 x 9 greased and floured pan. Bake for 25 minutes at 375 degrees.
