Perfect Corn Bread Recipe

This is my mother’s corn bread recipe, and I love it because it is moist and it tastes like cake (probably because it has some cake mix in it). The next time you have soup, make this recipe to go along with it.

Perfect Corn Bread
2/3 cup flour
2/3 cup yellow cake mix
2/3 cup cornmeal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
1 cup milk
1/4 cup shortening

Place all dry ingredients in a bowl. Then add milk, eggs, and shortening all at once. Beat until smooth. Pour into a 9×9 greased baking pan. Bake at 425 degrees for 20-25 minutes. Makes 9 servings.

  2. Well–of course its perfect! Cake mix! What a grand idea!! And yellow cake mix is my favorite of the mixes, and corn bread is my favorite of the not-yeasty breads. Perfect marriage of two faves.
