Yesterday, I made Orange Teriyaki Chicken and rice for dinner. It tasted really good. I got the recipe from a freezer meal planning class I took months ago. What I loved about this recipe is that it’s an easy meal to make and you can freeze it. I made a batch and cooked half of it, then froze the other half. It will be nice to pull it out of the freezer on a day I am tired or don’t have time to cook.
Orange Teriyaki Chicken
1/4 cup soy sauce
3 Tbsp. chopped onion
2 cloves garlic, minced
1 Tbsp. olive or canola oil
1/2 tsp. ground pepper
1/2 tsp. ground ginger
1/2 tsp. red pepper sauce (I didn’t add this because I didn’t have it, and it tasted good even without it.)
1 can (6 oz.) orange juice concentrate
6 boneless, skinless chicken breasts
Combine all ingredients except chicken. Place chicken breasts in freezer bag and pour marinade over chicken. Freeze in gallon bag, date and label. When cooking grill chicken 4-6 inches from heat source for 35-40 minutes. Serve with rice.
