3-Bean Turkey Chili
 
Ingredients
  • 2 teaspoons cooking oil
  • ½ cup onion, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, chopped
  • 3 teaspoons chili powder
  • 3 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 can (28 oz.) diced tomatoes, undrained
  • 1 jar (16 oz.) chunky salsa
  • ½ cup turkey gravy (optional)
  • 2 cups cubed cooked turkey
  • 1 (15 oz.) can white beans, drained and rinsed
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (15 oz.) can pinto beans, drained and rinsed
  • tortilla chips
Instructions
  1. In a medium pot, heat the oil. Add onions, celery, garlic, chili powder, cumin, salt, and pepper. Cook for a few minutes until onions are clear.
  2. Add in the remainder of the ingredients (except the tortilla chips) and stir well.
  3. Bring to a boil, cover, and reduce heat to a simmer for 30 minutes, stirring occasionally.
  4. Serve with tortilla chips, cheese, sour cream, and toppings of your choice.
