Carrot Cake Bars with cream cheese frosting

I really like carrot cake, but I’ve never made it before. So this week I decided to try these Carrot Cake Bars with Cream Cheese Frosting, and they turned out really good! I especially love the cream cheese frosting, and so does my one-year-old boy who licked all of the frosting off the carrot cake. This would be a delicious spring and Easter dessert for the family or something you could take to a family gathering. Here’s how to make Carrot Cake Bars with Cream Cheese Frosting:

Carrot Cake Bars with Cream Cheese Frosting
  • 1½ cups sugar
  • ¾ cup plain Greek Yogurt
  • ¼ cup vegetable oil
  • 4 eggs
  • 2 cups flour
  • 1¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 3 cups peeled shredded carrots
  • ½ cup butter, melted
  • 8 ounces cream cheese, softened
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 5 cups powdered sugar
  1. Using a mixer, mix the sugar, Greek yogurt and oil until combined.
  2. Add in the eggs one at a time.
  3. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon and salt. Add the dry ingredients to the wet ingredients and mix well.
  4. Fold in the carrots and pour the batter into a 9x13 greased pan.
  5. Bake at 350 degrees for 30 minutes. Test the center with a toothpick or knife. If it comes out clean, it's done.
  6. Cool completely, then frost with the cream cheese frosting.
  7. To make the cream cheese frosting, use a mixer to cream the butter and cream cheese. Mix in the vanilla and cinnamon. Add the powdered sugar and mix until smooth.
